San Jacobos (escalope with cheese and marinated cold turkey breast filling)

First of all, we place a slice of cheese on a slice of cold meat and then another slice of cold meat, like a sandwich. Hold the pieces together with toothpicks.

Beat the eggs in a bowl and add salt and pepper at your taste. Then, we need two trays. On one of them we will put flour and on the other, breadcrumbs with parsley. Now we take the ‘sandwich’ of cold turkey breast meat and cheese and put it on the tray with the beaten eggs, flip it and then put it on the tray with flour and finally we coat the ‘sandwich’ with the breadcrumbs with parsley.
On a frying pan, pour plenty of sunflower oil and we heat it up to 180ºC to fry the San Jacobos. Once we are ready, put them on absorbent kitchen paper to remove the remaining oil. Now you can enjoy your delicious San Jacobos.

As a side dish you can fry some chips, grill vegetables, or prepare a salad.

A package of sliced cheese for sandwiches.
100 g of flour.
100 g of breadcrumbs
2 eggs
Salt
Pepper
Minced parsley
